After hitting it off bartending together at a seafood restaurant downtown, Mike Klotz and Derek Shankland joined to open Delicatus in the historic Pioneer Square area in 2010. Delicatus crafts European-inspired sandwiches with Seattle-inspired names like The Activist, Ballard Lox, and Fire of 1889.
